1-10 oz. container Suzanne’s Ricemellow*
1-1/2 c sugar
2/3 c soy milk
1/4 c soy butter*
1/4 t salt
2 bags 12 oz. Guittard Semi –sweet chocolate chips
1 c chopped walnuts
1 t vanilla
In a large saucepan, combine Ricemellow Crème, sugar, milk, butter
and salt.
Bring to a full rolling boil over medium heat, stirring constantly,
Boil 5 minutes
Then remove from heat. Add chocolate chips and stir until chips
are melted
And mixture is smooth. Add walnuts and vanilla, and mix well.
Spray a 9” square baking dish with non-stick cooking spray. Pour fudge into prepared
pan
And chill until firm. Cut in desired size squares.
Our you UPS driver really enjoys this fudge. Quite often when he makes a delivery or if I happen to see him elsewhere, he asks if I have made fudge lately. Needless to say I make sure to set aside a few pieces for his next delivery.
